Ingredients:
4 large carrots, peeled and grated
2 tbsp fresh lemon juice
2 tbsp olive oil
1 tsp Dijon mustard
1 tsp sweetener (sugar, honey, maple syrup or allulose/monkfruit - you pick!)
Salt and freshly ground black pepper, to taste
Instructions:
Grate the Carrots: Use a box grater or peeler to grate the carrots. Place them in a mixing bowl.
Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, sweetener, salt, and pepper.
Combine: Pour the dressing over the grated carrots and toss well to coat evenly.
Let it Marinate: Let the salad sit for 10-15 minutes to absorb the flavors before serving.
